Breads
The following are wholesome, healthy, whole food recipes for a healthier lifestyle for you and your family.  The ingredients are whole foods that are generally found in your grocery store.  However, some ingredients may need to be purchased at a natural foods grocery.
This collection of recipes was recently begun (January 2011) by myself and the customers of Good Health Herbs.  I hope to expand it into many recipes as more are submitted.

EASY ALMOND MUFFINS
These are not only easy & delicious, but jam packed full of fiber, protein and other nutritious things!

1 ½ cups raw almonds
¼ cup maple syrup
3 eggs
1 teaspoon vanilla extract
¼ teaspoon salt
Zest of one lemon or orange, optional

Preheat oven to 375 degrees.

In a blender, grind almonds until flour-like consistency; use a spatula to scrape sides if it becomes sticky. Combine remaining ingredients in a small bowl; mix well. While blender is grinding almonds, slowly pour the liquid mixture in; continue to blend until well-combined.

Pour into buttered muffin pan. Bake 10-15 minutes, until golden brown. Makes about 6-8 standard size muffins.



Buttermilk Cornbread with Pepper Jack Cheese
From Valley Natural Foods, Rosemount, MN

1 cup whole wheat flour
1 cup cornmeal
2 tsp. baking soda
1 tsp baking powder
1 tsp salt
½ cup packed coarsely grated Pepper Jack cheese
¾ cup buttermilk
2 large eggs
3 Tbsp. pure maple syrup
¼ cup unsalted butter, melted

Preheat oven to 425˚.  Butter a 8x8x2 inch baking pan.  Whisk first 5 ingredients in medium bowl to blend.  Stir in cheese.  Whisk buttermilk, eggs and maple syrup in another medium bowl to blend.  Add butter; whisk until blended.  Add buttermilk mixture to dry ingredients; stir just until combined (do not over mix).  Transfer to prepared pan.  Bake until tester inserted into center of bread comes out clean, about 15 minutes.  Cool in pan.
